Pinot NoirThe grapes were handpicked at 13.5 Baume chilled, partially destemmed prior to completing a pre-ferment maceration for 5 days. The must was subsequently inoculated and fermented in open fermenters for 10 days. After fermentation was complete the must was Basket Pressed straight into French hogsheads where the wine was aged for 18 months.

The fruit for these small batch wines is carefully hand selected in the vineyard and then crafted into wines using boutique traditional methods by father and son grower-makers Bob and Iain Baxter.
