Tempranillo100% cool climate Tempranillo from high altitude granitic soils. A three day cold soak prior to inoculation, fermented in an open fermenter, with two pump overs per day and two delestage. Fermentation continued for 11 days between 14-25 degrees to retain the delicate varietal aromas. Maturation for 19 months in a combination of large format French, Hungarian and American oak. Bottled unfined and unfiltered. Tasting note; Complex and vibrant with sour cherry, cola, vanilla and spice including clove and cardamon on the nose. The palate is delicate and fresh with lovely cherry and cola notes, fine tannins and refreshing acidity.
