ChardonnayEmmanuel Giboulot Côte de Beaune "Combe d'Eve" is a highly regarded, biodynamic Burgundy wine made entirely from 100% Chardonnay. Produced by Emmanuel Giboulot, a pioneer of organic and biodynamic viticulture in Burgundy, this cuvée originates from a tiny, specialized plot on the slopes of the Montagne de Beaune. The Appellation: It falls under the rare Côte de Beaune AOC. This micro-appellation covers only about 33 to 52 hectares and should not be confused with the massive "Côte de Beaune-Villages" regional classification. The Vineyard: "Combe d'Eve" is a small, east-facing parcel situated in a valley hollow just above the famous Beaune Premier Cru Les Bressandes. The vines are roughly 40 years old. The Soil: A unique clay-limestone blend featuring white limestone lava, sandstone, and notable barium inclusions, which yields a distinctively mineral-forward wine. Winemaking Style: Emmanuel Giboulot operates on a philosophy of "less is more". The grapes are hand-harvested and gently pressed. The clear must is fermented using indigenous yeasts and aged for 12 to 18 months in old, neutral oak barrels (no new oak is used) to preserve the pure expression of the terroir without overwhelming wood flavours. He avoids adding sulphites during fermentation and completely skips lees stirring (bâtonnage) to protect the wine from forced oxidation. Nose: Pronounced and expressive, showing notes of ripe lemon, grapefruit, green apple, peach, and orange peel, accented by nuances of toasted almond, honey, and white flowers. Palate: Dry and medium-bodied with a vibrant, high acidity. It seamlessly balances a buttery, rich texture with a sharp, vertical minerality, finishing with a light hint of salinity and salted toffee.

View wineryBiodynamic producer. Domaine Emmanuel Giboulot is one of the oldest organic estates of Burgundy. Emmanuel's father had already stopped using any pesticide in the 70's. The estate is very spread out going from Côte Chalonnaise to Côte de Nuits with its core in the Côte de Beaune. All the vineyards are meticulously worked to produce the best grapes possible. Emmanuel produces unique and very stylish wines of purity and finesse.
