The vineyards became both a sanctuary and a symbol of transformation. In the early days, production was modest, focusing on Sangiovese and Trebbiano wines. Grapes were harvested by hand, crushed underfoot, and vinified with a single wine press and a handful of wooden barrels. Even then, there was a boldness in their approach, as evidenced by the creation of a sparkling wine made from Sangiovese—a testament to the community’s innovative spirit.
